Thai Yellow Curry

To me, curry is comfort food. One of the best things about making it yourself is you can choose the spice level you want.

Yellow Curry

Ingredients

  • 3 tablespoons olive oil

  • 3 cloves garlic, minced

  • 1 onion, diced

  • 3-5 chopped potatoes

  • 1 large carrot chopped

  • 1 bell pepper, diced

  • 1 lb raw meat, diced

  • 2 tsp fish sauce

  • 2 cans coconut milk

  • 1 tsp ginger abt 1 tbsp lime juice

  • 1 tbsp brown sugar

  • Salt and pepper to taste

  • 3 tbsp yellow curry paste

  • 4 cups water

  1. Put oil, garlic, fish sauce, onion, potatoes, pepper, and carrots into a large skillet or wok. Sauté over medium-high heat until the onion begins to soften, about 5 minutes. Stir occasionally.

  2. Add the meat and fish sauce. Cook until done. Add turmeric, ginger, lime juice, sugar, salt, and pepper. Cook for about 1 minute, stirring occasionally.

  3. Add the curry paste and coconut milk. Stir to combine. Reduce the heat to medium. Simmer for about 15 minutes.

  4. Taste to see if you need to adjust anything.

  5. Serve with naan or jasmine rice.

  • Notes: You can substitute different veggies for what you have on hand and feel free to try this recipe with red or green curry paste.
