A Perfect Blend of Tangy Grapefruit Curd in a Flaky Pie Crust

Grapefruit Tarts

Indulge your taste buds with the delightful flavors of a homemade grapefruit tart. This recipe combines the tanginess of grapefruit curd with the buttery goodness of a flaky pie crust, resulting in a mouthwatering dessert that is sure to impress.

Crust:

  • 1 ½ cups flour

  • ½ tsp salt

  • 1 cube unsalted butter, (chilled and cubed)

  • 3-4 tbsp ice water

Filling:

  • 4 large eggs

  • 1 cup sugar

  • 1 cup freshly squeezed grapefruit juice (about 2 grapefruits)

  • 2 tbsp grapefruit zest

  • 1 cube unsalted butter, (softened)

  1. In a mixing bowl, combine the flour and salt. Cut in the chilled butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

  2. Add the ice water, one tablespoon at a time, and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

  3. Preheat your oven to 375°F.

  4. Roll out the chilled dough on a lightly floured surface to fit a 9-inch tart pan. Press the dough into the pan, trimming any excess. Prick the bottom of the crust with a fork.

  5. In a heatproof bowl, whisk together the eggs, sugar, grapefruit juice, and zest until well combined.

  6. Place the bowl over a saucepan of simmering water, making sure the bottom of the bowl does not touch the water. Cook the mixture, stirring constantly, until is well incorporated. This should take about 7-9 minutes.

  7. Remove the bowl from the heat and gradually whisk in the butter until smooth.

  8. Pour the grapefruit curd into the prepared pie crust and spread it evenly.

  9. Bake the tart in the preheated oven for 20-25 minutes or until the curd is set and the crust is golden brown.

  10. Allow the tart to cool completely before serving. You can refrigerate it for a few hours for a firmer texture.

Notes: I like to add a little whipped cream to the top.
