Easy Banana Chocolate Chip Cupcakes

These fluffy dreamy cupcakes are a piece of cake to put together.

Banana Chocolate Chip Cupcakes

  • 1 box yellow cake mix

  • 3 very ripe bananas (abt. 1 1/2 C)

  • 1/2 cup water

  • 1/4 cup margarine or butter, softened

  • 3 large eggs

  • 1 tsp. vanilla extract

  • 1 cup chocolate chips (mini or regular)

  1. Preheat oven to 375 Mix everything but the chocolate chips for three minutes.

  2. Stir in the chocolate chips.

  3. Line 2 cupcake pans with liners. Fill 3/4 full.

  4. Bake for 18-22 minutes.

  • Notes: Change up the recipe with a different cake mix such as strawberry or chocolate. Both are winners. Let me know what you try and how it turns out.

  • Other variations Carrot cake cupcakes: Change the bananas to grated carrots; either use a spice cake mix or add 2 tsp. cinnamon and 1/2 tsp. nutmeg to the yellow cake mix. The chocolate chips are optional.

  • These are great with or without cream cheese frosting.
