Burrito Bowl
It is an easy dinner to satisfy the pickiest of eaters.

Burrito Bowl
Ingredients
2 cups rotisserie chicken chopped
2 cups cooked rice
Optional ingredients:
2 cups lettuce (chopped)
½ cup red bell pepper (chopped)
½ cup sweet onion (chopped)
1 can black beans (rinsed and drained)
1 can corn (drained)
1 cup cheddar/jack cheese (grated)
Optional toppings:
Sour cream
cilantro
green onions
tomatoes
guacamole or sliced avocados
salsa jalapenos or hot sauce
tortilla chips
Put a ½ cup rice in the bottom of 4 bowls.
Let people choose the toppings that go in their bowl.
Notes: You can substitute the chicken, for a ground or shredded meat, or go meatless.

This is a favorite summer meal when it's hot outside, or we're in a hurry. My kids like to make up their bowls and eat them outside on a picnic blanket.
