Burrito Bowl

It is an easy dinner to satisfy the pickiest of eaters.

  • 2 cups rotisserie chicken chopped

  • 2 cups cooked rice

  • Optional ingredients:

  • 2 cups lettuce (chopped)

  • ½ cup red bell pepper (chopped)

  • ½ cup sweet onion (chopped)

  • 1 can black beans (rinsed and drained)

  • 1 can corn (drained)

  • 1 cup cheddar/jack cheese (grated)

Optional toppings:

  • Sour cream

  • cilantro

  • green onions

  • tomatoes

  • guacamole or sliced avocados

  • salsa jalapenos or hot sauce

  • tortilla chips

  1. Put a ½ cup rice in the bottom of 4 bowls.

  2. Let people choose the toppings that go in their bowl.

  • Notes: You can substitute the chicken, for a ground or shredded meat, or go meatless.

This is a favorite summer meal when it's hot outside, or we're in a hurry. My kids like to make up their bowls and eat them outside on a picnic blanket.
