Breakfast Cookies
Ingredients
3 cups oats
1 tsp salt
2 tsp ground cinnamon
2-3 medium bananas, mashed (about 3/4 cup)
1 cup nut or seed butter
1/4 cup maple syrup or honey
1/2 cup apple sauce
1/2 cup raisins
1/2 cup dried cranberries
1/2 cup pumpkin or sunflower seeds
optional:
1/4 cup ground flax seed
¼ cup chia seeds
Preheat oven to 350°F. Oil, or use parchment, or silicone mats on two large cookie sheets.
Mix oats, bananas, nut/seed butter, with the salt and cinnamon. Once it's well mixed all remaining ingredients. The dough will be thick and sticky.
Use a tablespoon measuring scoop to divide the dough. Flatten with the back of the scoop.
Bake for about 16-20 minutes until the edges are slightly browned. Let them cook for about 10 minutes on the cookie sheet before moving them to a cooling rack. These are soft cookies.
Refrigerate or freeze leftovers. Makes about 24 cookies.
Notes: These are great with a handful of chocolate chips. Go ahead and add them. I won't tell.
