Banana Protein Pancakes

Ingredients

  • 1 1/2 cups cottage cheese

  • 1 large very ripe banana, mashed

  • 2 eggs

  • 1/4 cup canola oil

  • 1 tsp vanilla extract

  • 2 tbsp sugar

  • 1 tbsp baking powder

  • 1 cup flour

  • ½ tsp. salt

  1. Mix cottage cheese, banana, eggs, oil, vanilla in one bowl.

  2. In another bowl mix the other ingredients.

  3. Combine the two. Don't overmix.

  4. Pour ¼ cup on a hot greased skillet.

  5. Cook for about 2-3 minutes.

  6. Flip and cook for another 2 minutes.
